That’s exactly the point of car insurance, so people don’t do what you’re saying -- if they decided not to have insurance, and they have no assets and are thus judgment proof, if they hit you, you have no recourse. 

If I had to give advice, knowing what I know now, it would be to buy the best possible example you can afford. This car can cost a fortune to maintain in parts costs alone.

People crap on the ECU tuning and how it’s geared too short and a few other things. But I absolutely loved mine. Sure it could have been more optimized from the factory, but it’s a freaking turbo Miata that was DEAD RELIABLE for me across many road trips and many many track days. It was hilarious fun. SO GOOD.
