On Android, the battery info screen tells you how much power each program has used, and when. It also shows when various circuits are turned on, such as WiFi or the camera. Not sure about iPhone, but it might be similar.
I'm actually slightly creeped out by the fact that my phone would even record flashlight time. Wow.
I understand the GPS info.. but it even tracks when you had your flashlight on !!???

Did anyone watch the video? He didn't actually hit the balloon. He hit the target that the balloon was attached to, which is a feat in and of itself, but he didn't hit the balloon. The spall from the bullet is what popped the balloon.
