I'm thinking Wyatt is kind of a symbolic version of Dolores. He's set up to be the big villain to these hosts. I think Ford wants to subvert the memory of what Dolores did 30-35 yrs ago. He can never permanently erase the memory of what happened so he wants to create a new memory to cancel it out.

Bernard was made YEARS later. Look at how old Ford looks when he made him. That's no more than 10 years in the past, tops. Besides, you can pull a host aside & do some subtle aging from time to time.
