They have a rough outline for 5 seasons. Lost was pulled out their asses on a weekly basis until they had nothing left to pull out.
It's digging out the old church & the surrounding area for Ford's new narrative. Ford visited it with Bernard in the 2nd episode. It's probably the same church in Dolores's flashbacks. It might even have been involved with the Critical Failure of 30 yrs ago.

Zombies that most reasonable people would just wait somewhere for them to decompose to the point that their limbs would fall off. Smelly, but problem solved. If they don't rot, well then STOP FEEDING THEM BODIES. Just chill out until they starve.
But if they're not real people, then you're not really cheating on your spouse, which is the whole point of them. And you're not breaking some law in your country or even some religious restriction. They're really, really good looking blow up dolls.
