People will switch to english, but if you want to practice, you can keep speaking french even after they switch, they won’t mind.
It’s not uncommon to have conversations going back and forth between french and english or in a mix of both languages; we call it frenglish or franglais.

As an American, I found most Montrealers to be friendly, helpful and fluent in English. It’s definitely my favorite city in North America. It’s a beautiful town with a multicultural, European feel.
