get a good used truck on the cheap that *can* tow all that stuff, and a decent sedan that is PHEV (yeah I’m a Volt lover) or hybrid ($7k Prius, send it)? There is definitely a solution that involves two vehicles that are better separately than one that sucks at both.

Most vegan cheese is pretty bad and “meh” at best. But I have found that Chao slices are a good and melty. There’s a very very slight coconut taste at the back end, but on a savory heated sandwich you wouldn’t notice it at all.
In my own home, I feel like I can definitely bang out a dynamite vegetarian sandwich. Vegan’s tough though. Cheese is my crutch. I know it can be done, but I feel like the variety of what I can serve up would be incredibly limited.
