But it's also perfectly valid to bring up that Taylor Swift (whom you happen to know they do like) isn't exactly breaking the glass ceiling on feminist lyrics, or to bring up rap

Rather than saying "I hate rap" why not say, "I don't really like spoken word as much as sung lyrics, and I don't really like that most of the background is made by a computer/mixer and sampled." You could say that about any genre of music: "Opera

True, although I can think of some situations where it would be appropriate to say "eh, rap's not really my thing." If you were having a discussion of music and someone brought up rap music, I suppose. But you're right, in general it's not really necessary to state one's dislike for rap — or anything — for no reason.

Is there a difference between "I'm not a huge fan of rap" versus "I like everything but..." though? Personally I think it's the "I like everything but" that's the problem, because you're singling a certain group out as outsiders.

Honest question, is it the not liking rap, or the "all music but" part? I mean, I'm not personally a huge fan of rap, but I'm not a huge fan of experimental jazz or country pop either. There are always exceptions, but there are definitely kinds of music I generally like and kinds of music I generally don't.
