There have been a few one-off TV adaptations (Cartoons of Soul Music and Wyrd Sisters, live action of Hogfather and Colour of Magic). I didn't really think any of them properly caught the novels.

Exactly. The writing is still pretty sharp for a show aimed squarely at kids — the bits with the narrator in particular stand out. But while as a kid I thought it was nothing but razor sharp, as an adult — eh, some of it's a bit broad.
I loved it as a kid. I have some of the episodes on DVD. Watching as an adult, my assessment is that the show has not aged as well as you might have hoped, although not as badly as you might have feared.
