At the very beginning it was very grabby, but after the first couple hundred miles it wore in nicely. And despite being green, I don’t imagine it will take you too long to get used to it.

Hell getting a sunroof was the major factor in me chosing an STI Limited over the base STI.

Definitely be prepared for winter tires. I’ve got a ‘16 STI and even in New Mexico, I don’t know that I want them on in the winter. I’ll likely be replacing these with some good all seasons when they wear out.
Yes, if you get snow you’ll need winter tires. The tires that come stock are summer tires through and through. They work fine for me in New Mexico, but when it’s time to replace them, I’ll be getting some all weathers (no need for winter tires in NM).
