Personally, I go with: I don’t eat something with a central nervous system. Of course that leaves a few types of animals, like most jellyfish, but it covers the most ground with a single description that I can come up with.

I can understand the sentiment behind it, but then again, there’s already a word those who eat fish, but not other meats. That would be a pescetarian diet.

Yes, please... I’ve had to conversation with a friend why she’s not a vegetarian while she was eating scallops. Want to eat scallops? Fine, eat the hell out of those foul things (seriously, even the smell turns my stomach; I’ve always felt that way, long before I finally went vegetarian nearly 2 decades ago), but…

Yes, yes there are people that stupid. I’ve met “vegans” that swore to hell and back that they were vegan, yet ate shellfish. On the other end of the spectrum, I’ve encountered men who refused to eat a salad with their steak because “they’re not vegetarian.”
