Until he had a stroke and lost the ability to cook for himself, my dad loooooooved making boiled water dogs. Said it leeched out all the excess salt and fat. I’m the only one in my family who insisted it was nasty 

I think the idea with sous vide is that you can have your dirty water dog setup somewhere more central for guests to access (outside or wherever the food is setup as long as there’s an outlet)

I’ve made my own mayo - it’s fine but I don’t need anything other than Duke’s or Kewpir. if I really need to get fancy I’ll just mix some pureed jalapenos or garlic into storebought
