Cheap or cheapish knives are fine for 90% of people. The main issue, aside from build quality, is that I would argue ALL cheap knives need a good sharpening before you use them out of the box. With a proper sharpener you can turn even a dollar store knife into a razor blade.
That is an interesting question. I have never thought of it in detail, but hot dogs are fairly aggressively spiced compared to bologna, aren’t they? I’d classify them as firmer too, but still emulsified similarly.

Some aversions could be they don’t like the texture (for example seafood can be great but freshwater fish can lack a lot). Or had a bad experience, like someone forcing them to eat it, or the more common case of someone being shit at making it and them having to choke it down until they were an adult and moved out.
I would also point out some people/cultures equate “not eating meat” = not eating animal flesh. I had an ex from Japan who said she didn’t eat meat (seafood was fine), but was fine with things like things like pho, French onion soup, etc. so long as she wasn’t eating solid terrestrial animal parts
