My experience is that better restaurants temp their steaks to the “true” definition of rare, etc. I prefer a “rare” steak with the seared edges, but sometimes when I order that in a nice place, it’s almost alive. I’ve found that what I actually like is a “true” medium rare that cooks at a shit steakhouse would call…
