I just saw Nez in Grants Pass, OR, a few weeks ago. He was charming, in his gruff way, and I was delighted to see him, but the set (just him and a guy on steel playing mostly “And the Hits Just Keep On Coming”) was a little rough around the edges for my liking.
You’re missing the minute adjustments to taste and texture that the blender method allows. With an immersion blender, I guess you’d have to, like, ladle out a bunch of liquid and hold it aside before you blend what’s left, giving yourself enough leeway to add or not add as you see how the texture develops.
