You realize the balance of “server taking shit for Back of the house F up” versus “Back of the house blamed for server F up” is tilted way in your favor, right? And your wage doesn’t depend on it? Like, you don’t lose 10-20 dollars for a mistake, but the server might?

Golden Steak Rule: Chain restaurants (at least the “mid range” ones) always order it a step rarer than you want. (Maybe two steps!) You can always add heat, but you can’t make it “rarer”. Real, Honest to goodness, steak houses will deliver what you ask for, though.

Good Restaurants train their staff to “fire” the courses at the appropriate time. But, your solution: (Don’t order it until you want it, effectively taking the control for when the dish is started) is good, however you shouldn’t have to do this portion of the server’s job.
