If you’re open, you’re open. Schedule the deli staff until 10;15, 10:30, whatever you need to close/ clean the deli. I’ve worked retail where the closing staff schedule went 15 mins- 1/2 hour after closing. Hell, I worked somewhere that didn’t lock the door until 5 minutes after the closing time.

No disagreement here, but I will say that this is a management problem. The store ought to have the deli hours posted and have schedules that give enough time for clean-up afterwards. A lot of restaurants do this.
