I just recently started re-watching old seasons of Top Chef and man, did knowing about this make me see Isabella in a whole new light. I mean, it was right there. Gross.

I make a version of that based on an old NOLA recipe for Spinach Madeline. It’s basically spinach in a cheese sauce with a pepper jack cheese sauce and it is mighty tasty.  Because of that, I am often disappointed in restaurant creamed spinach because it’s usually so bland.

I eat hash browns for a meal.
