Both. Broth is more common but for the last several years Swanson has been selling what it calls “cooking stock.” So if I use store-bought, that’s what I buy.

I use coffee filters and regular strainers. Cheaper and less messy than either cheesecloth or a chinois.

That’s a good argument for having separate butter.

The fat can get rancid but it doesn’t actually spoil. I think the fat actually helps preserve it. Around my house a stick of butter hardly ever lasts longer than a week but I’m sure I’ve kept it out longer with no ill effects.

If you use a really sharp knife, you can trim super thin slices from the end but I’ll admit that going from the top is more efficient in this case.
