That lag is annoying. I no longer have a fan dial/buttton, but the new car I just got is very responsive. The fan spools up and down quickly.
Another new vehicle I recently bought has also done away with nearly all of the physical climate buttons, with the exception of temp. There are some upsides. The higher trim versions get a better dash design of a continuous screen vs. two separate screens. That helps.

I’ve driven many a generation of Mustang and you nailed it, the interiors have never been a key focal point.
I’m disappointed that the multi-gen family pic used the embarrassing uncle version of the foxbody. I would have hoped they’d have dropped a 93 Cobra into that portrait.
The exterior is an evolution, the interior is more of a revolution.
The screen treatment on the higher trim levels reminds me a bit of Lexus’ use on the NX and RX, at least it does to the right of the binnacle.
I’m a Mustang fan, so as long as this car remains in production, I’ll adapt to the new norms.

You can argue, but its not worth it. Go in knowing what you need. They can haggle with you and argue all they want, other offers help to support your ask.
