it's not that it's easier; it's faster and more precise. You can aim where you want to aim very quickly and intuitively, leaving things entirely up to skill and reaction time rather than fighting with imprecise controls. Auto-aim is used with joysticks because aiming with joysticks is a chore.

aesthetically it wouldn't work in all environments. also, in mobile devices icons have to be usable down to very small sizes, and many of the more detailed icons simply don't scale very well.
