Look into Indian food. They make an assload of vegetarian dishes (mostly because the vast majority are too poor to eat meat regularly) that still taste amazing due to the plethora of spices.

The most painless way to eat less meat is just to skip it for a day of the week, Meatfree Mondays for example.
