Yes, but generally flight sims will have been programmed to handle multiple monitors better than shooters.

I usually eyeball it by cranking the FOV up as high as it can go, and walk it back from there until it looks right.

I've got 3 monitors, and now I've got a video card that can handle it, but the FOV settings are always a pain. A really big part of having a movie feel epic is having orchestral music. LotR would have sucked if the amazing music was not there to support it, and Watchmen didn't have a score, it had a soundtrack, and it suffered for it.
