Yes and they largely made shortcut versions of ramen not top-line tonkotsu which you skim constantly for a long, long time. Sure it's easy if you're an attentive cook as the techniques aren't crazy advanced but being available to make a real quality tonkotsu is difficult for most people.

That's not true at all. Restaurant quality ramen broth takes DAYS to make. You can technically do that at home but it's not realistic for 99% of people. There are shortcut versions, sure, but then it's not restaurant quality.

What does being poor have to do with anything? There are plenty of high class restaurants that serve ramen, especially on the west coast. Why would someone be embarrassed to be seen eating it?
