Sausage. It’s heartier, there’s more you can do with it, and it’s much harder to screw it up such that it’s inedible.
In my experience, if you want the people in your favorite diner/coffee shop/whatever to warm up to you over multiple visits, the trick is to not be an asshole when you come in. Sure, tipping can help. But you get far more mileage out of being friendly, respectful, and reasonable with requests.

Well, it is possible to get fries without salt at McDonald’s by just asking. The employees will grumble, because it means making a fresh batch, but they’ll do it. (Some people do it just to get fresh fries and then resalt them themselves, not realizing you can also just ask nicely and get fresh fries.)
