A kindred soul. I detest the texture of ricotta and have always replaced it with cottage cheese in my lasagna. I’ll toss some in the food processor, whir it around with a few herbs and spices, and use it just like ricotta. I’ve had no complaints from anyone who has tried my lasagna.
