Yeah, Taco John’s is solid, it’s been way too long since I’ve eaten there.

I’m saying I wouldn’t like it as much if it was crumbled strips of bacon. Having chunks of pork to bite into is one of the enjoyable parts of carbonara. If it was just crumbled bacon strips, you lose that, even if the rendered pork fat still is used in the sauce.

I take issue with the notion that NPD is treatable with therapy, at least in a practical sense. Most therapists would tell you that it isn’t. I could see using bacon instead of guanciale, especially non-smoked bacon. I wouldn’t even complain (much) if it was smoked bacon..... as long as it was chopped/diced. I’ve seen “carbonara” with crumbled strips of bacon in it, and that’s what I was referring to as rage-inducing.

I went to a bar in LOUISVILLE FUCKING KENTUCKY and ordered a Manhattan, and the bartender had no idea how to make one. I’m in arguably the bourbon capital of the world, and this guy doesn’t know how to make one of the top 3 most famous bourbon drinks that exist.

I make it a point in life to try not to be a snob about anything, because snobs are annoying. I might think some things are trash, but I don’t trash other people’s tastes if they like those things.
