I think they can totally fit inside of the sled (without heads or limbs outside to be injured) and are supposed to quickly drop their heads in situations like this. Here it appears that the pilots head was out, but relaxed enough that pushing against the wall just drove the head back into the sled...
Rio 2016
Hey, last time I was in Rio and treated myself to a little Brazilian two-woman bobsled and I'll tell you what... we got airborne too and it's a goddamn wonder one of them hookers didn't die.
I like how they have "Brasil" on the bottom of the sled. Its almost as if the crash was anticipated.

You answered your own question. Automakers have resources: expertise, materials, processes, manufacturing, testing, etc. If an aerospace company worked on it, the sled would be 10X cost, 5X schedule, 3X the parts for redundancy, and it wouldn't carry people.
