Vegan here. My reasoning is, "If it's possible to obtain the nutrition I need from plants, there's no need to put animals possibly in harm's way because I like how cheese tastes."

I'm assuming that if the cells are just clones of normal cow cells and given adequate nutrition, and no chemical weirdness is introduced in the lab, that these would be no different than eating muscle tissue from real cows.
