Willow. She has the most extremes of light and dark - giving her a great journey to being a well-rounded, whole person. Whether she is in black-eyed anger mode or gently feeding Tara after her mind-wipe, or figuring out if she wants Oz or Tara, the writing makes her feel the most real, and accessible, for me.
