I think Wanda’s powers took her assurance that her brother is “far away” literally - as in, in a different universe. I can see how she could put in Fassbender into the mix by saying something similarly false about the kids’ grandparents.

In the comics, Wanda’s powers often work on a subconscious level and are triggered by stress. She’ll do something but not know that she did it, or that she was even capable of doing it in the first place (e.g. Rewriting reality so there’s no more Mutants).
