They're showing a TON of AI improvements, especially double-team blocking by the offensive line. There's a reason why this video focuses on the trenches - it's because it's one of the biggest areas that needed improvement over the series.
It's difficult to do halftime shows with highlights when they have the online franchise mode where people can complete other games that week at different times. It would be nice for the solo franchises, and I do miss it from the Genesis Madden games and from the 2K series, but it's not a dealbreaker.

No, there's no instance that would make it okay. Making the movie is a derivative work and that right is held exclusively by Nintendo. It has nothing to do with how much money they were trying to get. They could try to do it completely for free and it still could be easily C&Ded by Nintendo.
It doesn't matter if Square doesn't sell them - Square owns the exclusive rights to make derivative works of the properties they own. This is blatant violation of copyright.
