This doesn't look like a fear reaction, this looks like his heart couldn't overcome the upward acceleration and his brain lost too much blood (temporarily). This looks like a medical problem.
I mean, I see why people think it's funny, but it seems obvious that he didn't pass out from being scared. He passed out because the acceleration upwards drove blood out of his head and his heart couldn't keep up. If this doesn't happen to most people, he might want to get checked out by a doctor.
FWIW, UHT *probably does* kill off some enzymes. At least, I have no idea how it couldn't, given how damn sensitive to temperature they tend to be. That said, I can't imagine that has any effect on the nutritional value.

Adding in a little dijon mustard will help blend the oil and vinegar (mustard is an emulsifier). My recipe uses different proportions than yours, usually 2:1 vinegar:oil, but making a third of a cup take one squirt of mustard to blend right.

Remarkably, I'm in Seattle too. The one nearest my office (Virginia & 9th) has them - Texas, Memphis, Kansas City, and Carolina. That's probably, but not necessarily, the order I'd put them in re: goodness too.
