I keep a gallon freezer bag with odds and ends for stock in it. Whenever I only need a small bit of celery, anything I don’t use or my girlfriend doesn’t eat gets tossed in there and repurposed. It’s the only real answer I’ve come up with. Freezing some mirepoix just made the list of other options. Thanks!
