so, to sum up, the wafer literally changes to the body of christ, yet it is also true that nothing changes about it in any way that could possibly be observed. sounds to me like the only thing that changes is the word you call it

that isn’t the point, though.  the point is, why would someone want gluten-free wafers in the first place?  it gets transubstatiated, so any gluten in the original is gone, right?  so celiac sufferers don’t have to have special wafers

OK, imagine this: a person comes in for the AYCE sushi, but the owner notices they eat very little. Does he go over there and ask if everything is OK? Does he offer a refund/free dessert? Idk, but I doubt it. So then they’d be ok with an unexpected windfall, but not an unexpected loss.
