I did the leg of Lamb early in my Sous Vide career. It turns out amazing. It also let me know how much I don’t like Leg of Lamb, especially in large quantities. Maybe I seasoned it poorly, but man it’s just... so much.

As someone who doesn’t eat bread anymore, I miss sandwiches. But my replacement that makes you bread eaters jealous is my grilled cheese.

I did this at my last job actually and posted it to our local chat board. I got a lot of positive feedback about it.

A sous vide Ribeye, with a searing method depending on the weather is my go to. Though last time I tried a stovetop sear I burned out the fan in my microwave. The torch is fun though!

I think the use case I’m interested in for the breakfast casserole is night before prep and cook overnight. Waking up to large scale ready to eat breakfast for a group sounds like the perfect way to wake up with guests in the house.

I’ll echo some of the same sentiments here. I have an iPhone and an iPad and my iPad is still on iOS 9.x and jailbroken. It’s an entertainment device and a fun thing to play on. If something goes wrong or I have to wipe it, eh.

Great tip there too! I tend to send messages until it’s clear we’re both interested in continuing to talk, then meet up ASAP. If there’s too much lag between messages or the conversation doesn’t progress, it’s best just to move on.
