Yeah, it’ll just take longer to cook. Instead of it being 10 minutes, expect it to be about 30. You’re basically just cooking regular polenta, except using the braising liquid instead of water/milk/stock/etc.

Another bad place I’ve found out is in the cabinet that sits above where the toaster oven is. For the same reason as above the fridge/stove is bad.

Depending on the time of year, it’s typically more humid in the fridge than on the counter. So the fridge is a worse place for preventing mold growth. If you’re doing it to prevent cat access, though, by all means keep doing it.
