You can toggle the special abilities and can completely chose when to use them.
It depends on how you are tipping them? But really it likely comes down to resource use. Deflecting uses zero items, so nothing is lost, not even durability. And if you are tipping them over with objects like large metal crates and magnesis, those objects are not always available.

Try skipping the divine beasts. Doing so drastically changes the end fight, as you have to fight through the four divine beast bosses who guard Ganon. And you don’t benefit from the massive attack by the four beasts. It changes things up a bit.
