You're right. I was actually referring to the onions and peppers. Typically, I saute them in butter and then add olive oil when I'm ready to start cooking the potatoes. It might just be because I find olive oil easier to manage, temp wise.

Random thoughts. The other advantage to microwaving the diced potatoes even for just a minute (30 seconds, stir, 30 seconds) is that it dries the potato out a bit, which really helps them crisp up and cook more evenly.
