In such a case the more accurate maps would probably give the car a hint how the elevation of the road would be ahead and then the car could decide that it is completely impossible to have a sign in that position across the road.
Is there a 105 mph sign at all? If the sign does not exist it shall ignore it...
If there’s a need to enter every single road sign into the database respectively map, it is a loose -loose situation in my view. This is simply too much effort if there is a manual intervention necessary to fix those.
