I have a third-party Gamecube adapter (I’m fairly certain it’s the same one Cecilia pictured), and there was decent input lag. Not enough that I couldn’t compensate for, but it was definitely there.

Counterpoint: How is this any different than a restomodded Mustang, or a vintage hot rod built in the 1950's? Updating old cars with modern power has been a thing since Prohibition Era smugglers were running alcohol across the country. Electrifying old cars is just the next iteration of this idea.
