The steering feel of the new Mustang certainly isn't going to get you much closer to the 911 than the Focus ST. You can't honestly expect a modern vehicle like the Mustang (or Focus) to get anywhere near a non-assisted rack from 1974, especially coming from a performance brand like Porsche.
About 90% of the reasons you listed of why you like the 911 and 944 over the Focus ST don't really have to do with the engine at all. I've had plenty of seat time in a '72 911. The only reason I would say a Mustang is closer is because it is RWD. Not the engine.
