Instant pot’s pretty great! I’m on a sous vide kick right now, having just purchased an Anova (and buddy, that sous vide chicken!!), but the IP’s incredible for a lot of things.

That’s my go-to recipe as well. Learned it from having leftover baked potatoes one morning and finding that they worked so much better. Pro-tip: Instant pot those potatoes for a few minutes instead of night-before-par-boiling and you can do it all the same day.
