i might give it a shot. Beyond Burger is very, very different from the Morningstar Farms meat analogue, i’ve found. i recently made a meatloaf for a friendly competition with Beyond Meat and mine ended up being essentially the winner, even among the meat-eaters in our group.

i love bulghur, and i’m curious about this recipe — but i’m a vegetarian. do you think i could use one of the various meat substitutes like Beyond Meat in an equal amount to make a vegetarian version of this?

i’ll also recommend the new PBS/The American Experience documentary about Woodstock that is streaming now. it’s great.

they are actually working on bacon, steak, and some sort of seafood version, from what i have read.
