I must confess that although I plan to buy this game, I have never been a very big fan of the franchise in general. My kids will love the characters and amiibos so I'm going to make the purchase, but Smash has never hooked me. Maybe I just don't care for fighting games in general. How about doing a better job of setting expectations? If your games are typically not hitting their announced dates, that doesn't necessarily mean development is a failure. It means you need to be a bit more realistic about when you expect to ship the game, and communicate that to your potential customers.

There are no absolute statements in my reply to you specifically because of those examples.

They are consumer products often backed by millions of dollars in development. To some of the people that make them, they are art. To most of the people that bankroll them, they are products with risks that must be mitigated to ensure ROI.
