I have some quite nice hand-hammered french copper. That said, I'm always going to choose my Le Creuset cast iron skillet over it. Especially when it comes to bashing your silly stubborn head in.

Copper is excellent for conducting heat, not necessarily for sustaining it - esp. evenly. You need HQ, heavy gauge copper with TIN lining. That said, cast iron is still much more durable and longer lasting. Even the highest end copper cookware will eventually need relining.

Much more even heating area over entire surface, especially at higher temperatures. smdh, Sammy.
