If said game is Nukige, yeah they probably don't have developed personalities. If it's not, you'd be surprised how good the writing is.

I learned from the other comments here that the high-res texture packs don't work with the GOG-available game yet, but the guy that made it is working on a fix.

In terms of which game has aged the best, it's X-Wing Alliance with the high-resolution texture pack. They've all shown their age (the early ones especially), but Alliance was the most recent.

The key difference is that X-Wing vs. Tie Fighter was multiplayer-only while Rebel Alliance has a fully-featured campaign (XvT eventually got a small campaign, but it's something of an afterthought in my opinion).
