The best grilled cheese has three (3) slices. Two slices to adhere to the bread and the third to melt into a huge mess in the center. I like doing two mozzarella (touching the bread) and one slice of something else, like roasted red pepper jack or some Gouda (this piece is sandwiched between the mozzarella.)
