There is such an amalgam of good and bad information here (and in the comments section). Without writing a book, I am a former professional brewer of 15 years, and Micromatic trained draft tech. Of course that was a lifetime ago, but I don’t believe that much has changed.

I usually enjoy your work, Danny, but this post does a massive disservice to the brewing industry. It reads like you talked to one bar owner who wanted to prop himself up by denigrating others, Googled some “facts” and submitted this.

Counterpoint. A well poured draft beer is heavenly and I will risk a poor draft line any time I go to a bar. 

You just have to trick one of the other employees into cleaning the lines.

Johnsen is mistaken that beer sitting in lines goes flat. The line is under pressure along with the keg.

You can’t really hold American drivers to the same standards because if you take their licences away it’s basically social death since in a lot of places there’s no alternative to driving.

I’ve worked in a lot of kitchens in my life, and not a single one would stand up to a “real” inspection. There just aren’t enough employees or hours in the day to do the kind of daily deep cleaning people think happens at restaurants.

The highest speed limit on a public road in the country is 85mph. Why do cars need to be able to go any significant amount faster than that?

I think in Illinois (or maybe just in Chicago), bars are required by law to clean their lines every two weeks. I’ve had two places where this obviously wasn’t happening, but two bad experiences in twenty years is pretty good. Also, as a general rule, brewpubs tend to keep their lines clean, because they brew the beer
