I think the issue is the existence of the Idiot Host, and in my experience, it’s always THE Idiot Host. Every restaurant I worked at followed the same pattern: there was always one WONDERFUL host, a bunch of average-to-good ones, and one—and only one—complete and utter dipstick. There were no exceptions to this rule.

Poor, poor hosts. Man, though: a good host is not a thing to be taken lightly. They’re a rare and precious resource.
