To make it “humane” you’d have to make it quick, so you can’t just open a cylinder of N2 in the room and wait. Instead, you’d have to do something like drop in a bunch of liquid N2 so it could displace all the O2 in the room nearly instantly so hypoxia sets in quick, like during decompression in an airliner.
